obs-studio with Native NVENC, AV1 VAAPI, x264, x265, Browser, pipewire and game capture
OBS - Free and open source software for live streaming and screen recording OBS Studio is software designed for capturing, compositing, encoding, recording, and streaming video content, efficiently. It's distributed under the GNU General Public License v2 - see the accompanying COPYING file for more details.
This version of obs comes with support for NVENC and AMD AV1, it has browser docks/layers but browser docks are available only in X11 or XWayland mode. You can force obs to use xwayland by launching the app with command QT_QPA_PLATFORM=xcb

Pipewire audio capture that allows You to capture audio from single app or device
Game capture layer that allows You to capture games directly (open games or steam with command obs-gamecapture or OBS_VKCAPTURE=1)
