RPM already defines %patch - for applying patches - so redefining it looks like a desaster waiting to happen.

That's been in the spec file for ages with no ill effect so far but you're right I'll name the macro something else

It used to be %{patch} which was changed in this submission. That's most probably the reason it's worked.
