- Readd gtk-doc BuildRequires and repass enable-gtk-doc to meson
since the documentation is no longer broken.

I decided to strip the 'Build with libical 3.0' part as, from a ''general openSUSE user's perspective'', it's not important if it builds with libical 1, 2 or 3, as far as it works it's good.
Let me know if this is a stupid idea.
